Mexican Rice

🕔 Prep Time: 10 mins Cook Time: 30 mins Ready In: 40 minutes

🍛 Servings: 6

Ingredients:


  • 1/2 small white onion
  • 3 cloves garlic
  • 2 tbsp olive oil
  • 1 small can corn
  • 1 can red kidney beans
  • 1 tbsp. cumin
  • 2 tbsp. chilli powder
  • 1 tbsp. onion powder
  • 1 tbsp oregano
  • 1 1/2 cups preferred salsa
  • 2 cups basmati rice
  • 2 cups chicken broth
  • Salt and pepper to taste
  • Cheddar cheese to garnish as you please

Directions:

  1. Dice onion and mince garlic
  2. Using Instant Pot, sauté onions in oil until transparent
  3. Add garlic
  4. Turn Instant Pot off
  5. Add salsa, corn, beans and spices
  6. Stir mixture together
  7. Add chicken broth and rice
  8. Cook in Instant Pot on rice setting (10 mins)
  9. After cooking add salt, pepper and cheddar cheese to your liking
